PDF stands for Adobe Portable Document Format, and can be read either with Adobe's own Reader software or with Preview. Quartz (OS X's display technology) is based around the PDF format hence why OS X can deal with PDF's so easily, including the ability to output to PDF from the print dialog. PDF is an open standard, based off of Adobe's PostScript language.
